Description

These fluffy, protein-packed Cottage Cheese Egg Bites are the perfect grab-and-go breakfast! Blended until smooth and baked to perfection, they’re light, creamy, and customizable with your favorite mix-ins like spinach, cheese, or turkey sausage. Great for meal prep, low-carb diets, or busy mornings!


Ingredients

  • 8 eggs
  • 1 cup cottage cheese any fat content between 0% – 2% work best!
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ tsp onion powder
  • ½ cup cheese shredded
  • 1 cup mix-ins of choice ie. chopped spinach, diced peppers, broccoli florets, cooked sausage, ham etc.

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a silicone muffin tray. Non-stick cooking spray works best for easy release, but a bit of oil will do the trick too.
  2. In a high-powered blender, combine the eggs, cottage cheese, and spices. Blend until the mixture is completely smooth.
  3. Pour the mixture evenly into the prepared muffin tray, filling each cavity about ¼ cup full.
  4. Top each portion with shredded cheese and your choice of mix-ins. Use the back of a spoon to gently stir the toppings into the egg mixture. Add an extra sprinkle of cheese on top if desired.
  5. Bake for 18–22 minutes, or until the egg bites are set and no longer jiggly in the center.
  6. Let cool slightly before removing from the tray to help them firm up and release cleanly.

Notes

If you’d like to substitute whole eggs with egg whites, I recommend using about 1.5 cups (approximately 12 egg whites). Just keep in mind that this version tends to be a bit more moist and slightly less fluffy than when using whole eggs.
